The scientists highlight the importance of lactobacillus strains in microbe communities such as those found in sauerkraut fermentation. Bacteriocin-producing lactobacillus possess a competitive advantage in the context of food preservation and probiotic activity. The study by Butorac et al. (2020) borrows previous findings involving spontaneous fermentation studies that were focused on lactobacillus brevis and lactobacillus plantarum. Notably, Lb. Brevis SF9B and Lb. Plantarum SF9C was isolated from these fermentations, with SF9B exhibiting functional properties attributed to its surface-layer proteins (Slps).
