The Glycemic index is a tool used to measure the extent to which a specific food leads to an increase in blood sugar. The tool has a measure from 0 to 100. Foods that lead to a minor increase in blood sugar are said to have a low glycemic index, while those that lead to a surge in blood glucose are said to have a high glycemic index (Sobotka & Forbes, 2019).
