Exposing food to harmful substances may bring forth detrimental health effects. Some substances that may be exposed to foods include Acrylamide and 4-Mel. Acrylamide is formed naturally from starchy foods in a chemical process known as the Maillard reaction (Rifai & Saleh, 2020). On the other hand, Folmer et al. (2019) explains that 4-Mel is formed when ammonia interacts with reducing sugars in caramel food colorings.
Both Acrylamide and 4-Mel exposure have been found to lead to tumors and cancers and significant effects on the nervous system. Additionally, exposure to these chemicals may adversely affect male reproduction and fetal growth and development. Several human studies show an increased risk of cancer incidence with long-term dietary exposure to Acrylamide (Rifai & Saleh, 2020). Workers exposed to Acrylamide in their workplace are at an increased risk of developing nervous system disorders.
